How to do the dinner

Bruschetta

1 loaf French baguette
1 tomato
1 tsp basil
½ onion
1 tbs olive oil
1 tbs garlic
1 tbs balsamic vinaigrette

Step 1: Cut French baguette into rounds.

Step 2: Dice tomato and  ½ onion.

Step 3: Mix tomato, onion, olive oil, basil, garlic ,balsamic  vinegar in a large bowl.

Step 4: Toast bread in the oven (both sides)

Step 5: Put 1 tbsp of topping on each toasted baguette

Chicken breast with white wine onion sauce

2 boneless chicken breasts
1 tbsp plus 1 ½ tsp salt
4 ½ tsp pepper
¼ cup extra virgin olive oil
3 tsp garlic powder
3 tbsp lemon juice
2 tsp rosemary 
½ tsp parsley
1 tsp basil
2 tsp oregano
1 cup flour
5 tablespoons butter
½ cup white wine
½ julian sliced onion
½ cup water

Step 1: Cut the chicken breast in half horizontally (or butterfly)

Step 2: Marinate chicken in a large freezer bag with extra virgin olive oil, 1 ½ tsp salt, 1 ½ tsp pepper,  garlic powder, 1 tsp rosemary, parsley, basil,  1 tsp oregano, 2 tbsp lemon juice, and massage thoroughly with hands, let sit up to a  half hour.

Step 3: Put flour in a bowl mix with 1 tbsp salt, 1 tsp rosemary, 1 tsp oregano, and 3 tsp pepper, mix well.

Step 4: Place 2 tbsp of butter in a hot pan and melt it.

Step 5: While butter is melting, roll chicken in flour mix and coat well. (It won’t make a thick breading.)

Step 6:  Cook on medium-high heat for about 7 minutes on each side, or until done all the way through.

Step 7: Remove chicken from pan then add ½ cup white wine. Let wine simmer down for about 5 minutes, stirring occasionally.

Step 8: Add onions, 1 tbsp lemon juice and 3 tbsp butter to wine and let simmer down.

Step 9: Pour ½ cup water into wine sauce. Return to heat.

Step 10: Plate chicken, top with wine sauce and onions. (If chicken is cold, microwave 45 seconds before

Twice baked potatoes

2 large baking potatoes
½ cup sour cream
3 tbsp butter
½ cup shredded sharp cheddar cheese
2 slices sharp cheddar cheese
2 tsp garlic powder


Step 1: Rinse thoroughly, then poke top of potatoes with a fork.
Step 2: Microwave each potato individually for 7 minutes.
Step 3: Once microwaved, bake in oven at 350 for 30 minutes
Step 4: Cut skin on top of potato off, then scoop out middle of potato into a large bowl, leaving edges for support.
Step 5: Mix potato in bowl with butter, sour cream, shredded cheddar, and garlic powder.
Step 6: Return the mixture in the bowl to hollowed potatoes and top with a slice of sharp cheddar cheese.
Step 7: Return to oven for 5 minute.
Step 8: Let cool and enjoy

Chocolate covered strawberries with whipped cream

6 oz chocolate chips
10 larger strawberries
½ pint heavy whipping cream
2 tbsp sugar
1 tsp vanilla

Step 1: Mix heavy whipping cream, vanilla and  tbsp sugar in a large bowl. Whisk for 10 minutes or until it forms stiff peaks.

Step 2: Melt 6 oz of chocolate chips in a sauce pan on low continually stirring until chips are melted.

Step 3: Dip strawberries in chocolate, coating them. Let set on a cookie sheet.

Step 4: Top each strawberry with whipped cream.

How did you do “I do”?

One proposer who shared his story with us took his fiancée to a rose garden.  After taking his soon-to-be fiancé to several locations looking for the most romantic spot in the garden, he still couldn’t work up the nerve to ask the question. They walked on and off the trail, thorns and all, for two hours only to end up exactly where they started. Out of exhaustion, she sat down in the car, where he finally got up the nerve.


Remember the saying “A knight in shining armor”? One local man rented a suit of armor and a horse and rode up to his love.  He jumped off the horse, clanked over to her, and proposed on one knee with all of her friends watching.  Of course she said yes.


Even the most prepared of people can’t be perfect.  A UCC student had a custom ring made and watched the entire process, scrutinizing and literally studying every tiny facet of the process. Once the ring was done, he saw his girlfriend and . . . chickened out.  For an entire week!  He finally decided his best opportunity was while she was on the computer and he was watching TV.  He marched over, spun her chair to face him and  blurted out the question.
